Healthy Pumpkin Brownie Recipe for Halloween

Say hello to the perfect Halloween snack! Satisfy all of those sweet chocolate and festive pumpkin cravings in one delicious brownie.

Connie Leung is back again with another amazing plant-based recipe just in time for the pumpkin-spice season. Enjoy it with some of your favorite Vegan Protein or Good News Gummies.

 

Pumpkin Brownies

Ingredients:

• 1/2 cup almond butter
• 1/2 cup pumpkin puree
• 1/4 cup maple syrup
• 1 Tbsp ground flax
• 1/4 cup cocoa powder
• 1 tsp vanilla
• 1/2 tsp baking soda
• 1/8 tsp salt
• 1/4 cup chocolate chips
• 1 tsp pumpkin pie spice

Directions:

1. Preheat the oven to 350F
2. Combine 1 Tbsp ground flax with 3 Tbsp of water and set it aside
3. Add all the ingredients in a food processor except for the chocolate chips. Process until smooth
4. Once smooth, add the chocolate chips and pulse a few times
5. Pour the batter into a 6x6" baking pan lined with parchment paper and bake for 40 minutes
6. Check doneness by inserting a toothpick in the center. If it comes out clean, remove from the oven
7. Allow the brownies to cool completely before transferring it to a wire rack

Tips:

• Serve as a Halloween treat platter with pumpkin spice popcorn and Herbaland Gummies
