Cabbage & Broccoli Slaw with Peanut Dressing

Looking for a healthy and delicious new salad recipe? This delicious cabbage slaw is full of cruciferous veggies and fiber

Ingredients for Slaw

  • ½ purple cabbage washed and shredded
  • 4 broccoli stalks, washed and matchstick chopped
  • 1 cup of chopped pea shoots
  • 2 carrots, skin on and washed, grated
  • ¼ cup green onion, chopped
  • ½ cup cilantro, chopped
  • Sesame seeds for garnish
  • Lime slices for garnish

Method

  1. Wash and chop all veggies
  2. Throw all in a bowl
  3. Drizzle with dressing
  4. Garnish with fresh lime slices and sesame seeds
  5. PRO TIP: toss the slaw in the dressing and let it sit for a couple hours, this allows the veggies to soften but stay crunchy. Plus when the flavors are able to sit for a while, it's so much better!

Ingredients for Peanut Dressing

  • 2-3 cloves of garlic
  • 1-inch knob of ginger, peeled
  • ½ lime, juiced
  • ½ cup peanut butter
  • 2 tbsp coconut aminos (or use tamari or soy sauce)
  • 1 tbsp rice vinegar
  • 1-2 tsp siracha
  • 2 tbsp maple syrup
  • Dash of chili flakes (optional)
  • Dash of coconut milk (or almond or milk of choice)

Method

  1. Throw all of the above EXCEPT milk into a food processor
  2. Blend until smooth
  3. Slowly add milk to smooth out to desired consistency
  4. Add to slaw and enjoy!
